Monday is the New Sunday
Raise your hands if you like delicious homemade breakfasts but are kinda lazy and don't wanna do like 18 hours of prep the night before... Yeah me too.
I recently found this super easy recipe for vegan cinnamon buns. They aren't as amazing as Cinnaholic - but we all don't live in Berkeley. Annnd they are closed on Mondays...
Quick and Dirty Vegan Cinnamon Buns
• 1 c white all-purpose flour
• 1 c whole wheat flour
• 4 Tbsp vegan margarine
• 1 tsp salt
• 1 Tbsp baking powder
• 3/4 c vanilla almond milk
• 3/4 c brown sugar
• 1 Tbsp cinnamon
• 2 tsp melted margarine
Icing:
powdered sugar
vanilla almond milk
(Using powdered sugar and a splash of almond milk. Mix together to desired consistency and amount)
Preheat oven to 450.˚ Combine flour, salt and baking powder in a large mixing bowl. Cut in margarine and massage the marg into the flour mixture using your fingers (it's fun!). Then add the almond milk. It's easiest to knead together using your hands. Roll dough into a ball and place on a floured surface. Roll into a rectangular shape (mine was sorta oblong).
Brush melted marg and sprinkle brown sugar and cinnamon on top. From the long side of the roll, tightly roll into a tube placing the seam on the bottom. Then cut the roll into 1" rolls (makes 12 - 15 buns).
Place rolls into a greased baking dish (I used pie tins). Bake for 12-13 minutes, until poufy and golden.
You can ice these bad boys while they are still hot because you want the icing all melty and gooey-like.
Then enjoy!
